I’ve been saying for months (ack!) that I need to have a big freezer cooking session, but the truth is, I’ve been living in survival mode. I’m moving out of it, but it’s rather slow since we still have so much left to do on our new (foreclosure) house and since I took a new part-time job as Director of Children’s Ministry at our church.
Anyway, even when you’re operating in survival mode, you still have to get meals on the table. That’s why I was happy to be given a copy of Jessica Fisher’s new cookbook Good Cheap Eats: Dinner in 30 Minutes or Less. Who doesn’t want to get dinner on the table in less than 30 minutes, right?!!
I’ve already cooked five recipes from the cookbook, and we have loved them…and yes, they have been easy to prepare. That makes me so happy!!
One of my very favorite things about the Good Cheap Eats cookbook is the “allergen key” at the top of each recipe. With our various food allergies, it’s helpful to know right away what is gluten-free or dairy-free, etc.
I also love that she pairs each main dish with a side dish. I always sometimes get tired of trying to come up with side dishes, so having them paired already is a great plus.
