This is a very easy and yummy recipe for Gingerbread Cookies! Even better (at least for us), it’s milk-free and egg-free!

Ingredients:
2/3 cup brown sugar
1/2 cup room-temperature margarine (we use dairy-free)
3 T water
1/4 cup molasses
2 cups flour
1.5 tsp baking powder
1.5 tsp cinnamon
1/2 tsp ground ginger
1) Preheat oven to 375 degrees. Cream together sugar and margarine. Add the rest of the ingredients and mix well.
2) Roll out the dough to about 1/4 inch thickness. Cut with cookie cutters and place on ungreased cookie sheet.
3) Bake for 8-9 minutes (don’t overcook — they will harden as they cool). After you take them out of the oven, allow them to cool a few minutes. Then, transfer them to a wire rack to finish cooling.
