This Instant Pot potato soup recipe is so easy and yummy…and perfect for a chilly day!
Oh, Instant Pot. How I love thee…
I use my pressure cooker at least several times each week, and it makes cooking so much easier. With the drop in temperatures (finally!) and an approaching ice storm this weekend, I’ve been testing out several different Instant Pot soup recipe ideas to keep us warm!
My husband and kids all loved this potato soup recipe, so it will definitely be added to the rotation. I’m not a huge fan of using canned evaporated milk or processed cream soups in potato soup, so this recipe just uses milk and cheese in addition to the potatoes, carrots, and chicken broth. If you have a dairy allergy, you can probably substitute your favorite milk (canned coconut would be my recommendation to keep a bit of the creaminess).
I didn’t have fresh onions or garlic on hand, so this recipe includes scant amounts of minced onion and garlic. My family (and my digestive system) aren’t huge fans of onion and garlic, but if you are, you may definitely want to add more as desired.
Easy Instant Pot Potato Soup Recipe
Time: 10 minutes prep. + 40-50 minutes cook time
Serves: 6-8 (or 5 if your family eats as much as mine!)
Gluten-free, nut-free
Ingredients:
- 3 lbs. potatoes
- 48 oz. chicken broth
- 1 c. chopped carrots
- 1 tsp. minced onion (or 1/8 cup chopped onion…or more if you like onions!)
- 1/2 tsp. minced garlic
- 2 c. milk
- 1 c. shredded cheddar cheese
- Salt and pepper to taste
- Crumbled bacon pieces, optional
- Sour cream, optional
Chop the potatoes (you can choose to peel them, but I always leave the skin on) and carrots. Add to the Instant Pot. Next, pour in the chicken broth and add the spices. Choose the “Soup” option on your Instant Pot (or manually set on high pressure for 30 minutes) and allow to cook. When finished, do a “Quick Release” and turn the pot on to “Saute”. Stir in the milk and cheese. Continue cooking for two to three minutes stirring occasionally.
Add salt and pepper to taste. Serve with bacon crumbles, sour cream, and/or crackers if desired.
