I don’t know about y’all, but sometimes I need meals that are quick and easy to prepare. In Arizona, school will be starting in a few days – which means I’ll be needing quick meals like this Ham and Pineapple Fried Rice. One of the best things about this recipe, is it uses leftover rice and ham! I love feeling like I’m getting 2 meals for the price of one! If you don’t have leftover rice, just be sure to plan ahead and make your rice early enough in the day so it can be refrigerated and cold by the time you start dinner! I like that this is a meal in one – It has the grains, protein, fruits and veggies. We usually serve egg rolls on the side. Fried rice is a favorite in my family and I hope you enjoy it as well!

Ham and Pineapple Fried Rice
Yield: 6-8 servings
Ingredients:
- 2 eggs
- 2 tbsp. water
- 2 tbsp. butter
- 2 tbsp. vegetable oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 (16 oz.) bag frozen peas and carrots, thawed and drained, (optional)
- 4 cups cooked white rice, cold*** (see note)
- ¼ cup soy sauce (more to taste)
- ½ tsp. black pepper (more to taste)
- 2 cups cooked ham, diced
- 1 can (20 oz.) pineapple tidbits, drained
*** It is very important to use cold rice for this recipe!
Directions:
In a small bowl, beat egg with water. Melt butter in a large skillet or wok over medium-low heat. Add egg and scramble until cooked through. Remove from skillet to a small bowl. Heat oil in the same pan. Add onion, garlic and the peas and carrots. Saute until the onion is soft. Then add rice, soy sauce, black pepper, ham and pineapple. Stir-fry together about 3-5 minutes, until mixture is well combined. Add the eggs and stir to combine. Serve hot!
