Hi friends! With St. Patrick’s Day approaching, I wanted to share a super easy Irish Soda Muffin recipe with y’all! It goes perfectly with corned beef and cabbage ….. or serve them for breakfast! Although they’re great with a pat of butter, it’s totally not necessary!
My kiddos just love these muffins – I hope your family enjoys them as well! 🙂
Irish Soda Muffins
Printable recipe
Yield: 12 muffins
2¼ cups all-purpose flour
½ cup sugar
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 cup sour cream
¼ cup milk
¼ cup vegetable oil
1 egg, beaten
â…” cup raisins
Preheat oven to 400°F. Line a muffin tin with paper liners. Set aside.
In a medium bowl, combine the flour, sugar, baking powder, baking soda and salt. In a separate bowl, whisk the sour cream, milk, oil and egg; stir into the dry ingredients just until moistened. Fold in raisins.
Fill muffin cups two-thirds full. Bake for 15-18 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing to a wire rack. Serve warm.
