Sometimes coming up with lunch ideas is a little challenging for me! I don’t mind planning and cooking dinner, but I like something quick and easy for lunch (we usually have a rotation of left-overs, soup, and sandwiches).
I was wanting to get some new ideas, so I posed the question to Facebook readers a few weeks ago. They had so many good ideas!! Here are a few of their quick-and-easy lunch suggestions:
Quesadillas: Go with cheese and tortillas or add whatever meat you have on hand. You can also add hummus for extra protein. Serve with sour cream and salsa. — I Can Teach My Child and Melanie
Chicken Wraps: Chicken, lettuce, and tortillas — Jessica
Pizza Quicks: Spread pizza sauce on slices of bread, top with your favorite toppings (cheese, pepperoni, bacon, etc.), and put them in the oven at 350 degrees until the cheese melts. — Kristen

Peanut Butter Crunchy Roll-Ups: Start with tortillas, add peanut butter, and then your choice of “crunch” (apples, celery, cereal, toasted nuts, or banana chips). — Elizabeth
Tuna Salad: Tuna mixed with Italian Dressing on top of your favorite crackers. Add cherry tomatoes or shredded carrot, if desired. Serve with fruit. — Tamra
Crescent Dogs: Wrap-up hot dogs in crescent rolls and bake according to package directions. — Let This Be A Lesson In Life
Quick Pasta: Cook up any kind of quick pasta and add some type of cheese, veggie, and meat to it. Use whatever you have on hand. — Sheila

I like to spread some veggie cream cheese or plain cream cheese with some ranch mixed in on a tortilla, lay down some baby spinach leaves and then add some sliced green pepper….roll it up and enjoy! Sooo yummy! Some people prefer a little turkey in it also.
