One thing I’ve always been scared to try to make is tortillas, but a friend of a friend shared her recipe over on her blog On Life and Beans — and I wanted to give them a try! I make them regularly now!!
It does take some time, but it’s nice to know there are no preservatives or trans fat in them! These will not turn out like store-bought tortillas, but they are delicious!!
Ingredients
1 cup white flour
1 cup whole wheat flour
1 T. baking powder
1 t. salt
1 cup hot water
4 T. olive oil
1) Mix together the dry ingredients.
2) Add the water and oil to the dry ingredients. Mix well. Dough should be soft and easy-to-work.
3) Separate the dough into many small balls (maybe 2 inches in diameter depending how big you want the tortillas to be). Roll each ball very thin and round (good luck!! 🙂 ).
4) Warm your skillet on medium. Toss the tortilla on and brown each side (I do about 10-30 seconds per side, so mine get a little thicker. Andrea says it should take just seconds if your pan is the right temperature)!!
5) Serve nice and warm!!
I tried making these once (different recipe though) and I couldn’t get them very thin. They ended up more like flatbread. I’ll have to give these a try though.

This tortilla recipe works best when the dough is soft–it’s much easier to roll the tortillas out into nice circles. If you find the dough a little “bucky,” it’s a sign you’ve added a bit too much flour or not quite enough water. Either way, though, they are still going to taste great. 🙂

I wonder how this would work with GF flour. I’ve had trouble finding a good gf tortilla, so I’m thinking about making my own.
Hmm…I’m not sure? Do you generally use almond flour or what kind of flour? I haven’t tried it with any other kind of flour!
