I had never made biscotti, and I mentioned it one day on my Facebook page. I was so excited when Wendi from Sew Cat Sew sent me two of her tried-and-true recipes! They are delicious and almost fail-proof (well, the first time I attempted to make them, they were a little more “doughy” than crunchy…but that is more the fault of the cook then the recipe!!). 🙂
Anyway, here is the first recipe — super delicious and easy Chocolate Biscotti! When I made them, I did leave out the dried cranberries, since I didn’t have any. I’m sure they are delicious either way!
Chocolate Biscotti
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
6 Tbsp unsalted butter (softened)
1 cup sugar
2 large eggs
3/4 cup dried cranberries (optional)
3/4 cup mini chocolate chips (I just used regular size since that’s what I had!)
1. Sift together flour, cocoa powder, baking soda, baking powder, and salt. Cream butter and sugar together, and then beat in eggs. Add dry ingredients to wet mixture. Add chocolate chips (and cranberries if desired).
2. Cover a cookie sheet with parchment paper. Divide dough in half and shape each part into a 12-inch-long, 1/2-inch-thich log. Bake at 350 degrees F for 30 minutes. Allow to cool for 20 minutes.
3. Slice the loaf diagonally in 1/2 inch pieces with a serrated knife (just pressing it down worked best for me). Stand the pieces up on their sides on the baking sheet. Bake for 8 minutes on one side. Turn to the other side and bake for another 8 minutes. Allow to cool completely. Store in an air-tight container.
